Premium Pork Chop Laurane

Ingredients:

1 center cut Premium Reserve Pork Chop (SKU: 1677)
1/2 green pepper, julienne
1/2 red pepper, julienne
1/4 sweet onion, julienne
1 clove garlic, finely diced
1 tbsp. soy sauce
1 tbsp. brown sugar
1/4 cup chicken stock

4 ea lb Chef Master PA Dutch Sausage Links (SKU: 3124), left whole and roasted

8 Russet potatoes

1 white onion

1 clove garlic, smashed

Kosher salt or sea salt to taste

Freshly ground white pepper to taste

1/8 tsp. freshly grated nutmeg

3 eggs

2 Tbsp. potato starch

Extra-virgin olive oil

2 Tbsp. apple sauce

2 Tbsp. sour cream

Directions:

Dredge chop in seasoned flour and sear. Add onion, peppers and garlic. Cook until soft. Add chicken stock, soy sauce, and sugar. Bring to a simmer and reduce heat in half. Serve over brown rice.
