8 oz Premium Reserve Pork Strip Steak (SKU: 1636)
2 tbsp. Key West seasoning
4 oz shallots
4 oz white wine
2 oz tequila
3 oz butter
1 ea lime


4 ea lb Chef Master PA Dutch Sausage Links (SKU: 3124), left whole and roasted

8 Russet potatoes

1 white onion

1 clove garlic, smashed

Kosher salt or sea salt to taste

Freshly ground white pepper to taste

1/8 tsp. freshly grated nutmeg

3 eggs

2 Tbsp. potato starch

Extra-virgin olive oil

2 Tbsp. apple sauce

2 Tbsp. sour cream

Season the pork well with the seasoning. Grill until medium well. Chop the shallots. Reduce wine, tequila and shallots until dry. Whip in the butter to emulsify. Rest the pork, top with the sauce and limes.
